Baked ricotta

A tasty topping on toast

Ingredients

400g low fat ricotta (100g per person)

1 tbsp lemon juice

1 tbsp lemon zest

1 tbsp balsamic vinegar

1 tbsp thyme

2 tbsp extra virgin olive oil

garnish optional - diced tomato, sun dried tomatoes, olives and/or parlsey,

Instructions

1. Preheat oven to 205 degree celcius.

2. Place ricotta in baking dish

3. Mix lemon juice, lemon zest, balsamic vinegar, thyme and oil in a cup. Pour mixture over ricotta

4. Bake for 20-30 minutes or until ricotta starts to go lightly brown

5. Remove from oven and top with garnish
