Korean Bibimbap
A quick and easy recipe to make when you’re running low on ingredients.
Ingredients
1/3 cup carrot, diced
1/4 cup celery, diced
1/3 cup broccoli, cut into small florets
1/3 cup mushrooms, diced
1/3 cup capsicum, diced
1 package bean sprouts
1 package 90sec basmati rice (1/3 per person)
1-2 tbsp soy sauce/tamari
2-3 garlic cloves, finely minced
1 tbsp sesame oil
2 eggs (per person)
Toppings (optional):
Sesame seeds
Green onion
Kimchi (vegan/vegetarian)
Sriracha chilli sauce
Instructions
1. Sauté veggies in pan with sesame oil and garlic until tender.
2. Add soy sauce and rice to veggies, mix well and let sauté in pan for another 3-4 minutes.
3. In a separate pan, fry eggs. Serve eggs over the veggie fried rice and add desired toppings.
