Chickpea salad
A tasty salad that can be enjoyed as your meal
Ingredients
2 sweet potato, cut into chunks
1 can of chickpeas
1 red capsicum, cut into smaller pieces
4 small cucumbers, sliced
1 punnet of cherry tomatos, cut in half
2 - 3 handfuls of baby spinach, roughly chopped
4 dates, chopped
small packet of goats cheese
1/2 tsp cumin
Dressing
2 tbsp extra virgin olive oil
1 tbsp lemon zest
2 tbsp lemon juice
2 garlic cloves, finely diced
salt and pepper to taste
Instructions
1. Preheat oven to 180 degrees
2. Place sweet potato, red capsicum and chickpea in a baking dish
3. Drizzle extra virgin olive oil, add cumin and salt and pepper and roast for 45-50mins
4. Mix cucumber, tomato, spinach and dates in a bowl
5. Mix the salad dressing ingredients together and add to salad
6. Once the vegetables are done, add salad, and top with 1 tbsp goats cheese
