Chickpea salad

A tasty salad that can be enjoyed as your meal

Ingredients

        

  • 2 sweet potato, cut into chunks

  • 1 can of chickpeas

  • 1 red capsicum, cut into smaller pieces

  • 4 small cucumbers, sliced

  • 1 punnet of cherry tomatos, cut in half

  • 2 - 3 handfuls of baby spinach, roughly chopped

  • 4 dates, chopped

  • small packet of goats cheese

  • 1/2 tsp cumin

Dressing

  • 2 tbsp extra virgin olive oil

  • 1 tbsp lemon zest

  • 2 tbsp lemon juice

  • 2 garlic cloves, finely diced

  • salt and pepper to taste



    Instructions

    1. Preheat oven to 180 degrees

    2. Place sweet potato, red capsicum and chickpea in a baking dish

    3. Drizzle extra virgin olive oil, add cumin and salt and pepper and roast for 45-50mins

    4. Mix cucumber, tomato, spinach and dates in a bowl

    5. Mix the salad dressing ingredients together and add to salad

    6. Once the vegetables are done, add salad, and top with 1 tbsp goats cheese
