Eggplant pizza

A simply and tasty snack or addition to your meal

Ingredients

        

  • 1 eggplant, thinly sliced

  • 8-10 tbsp pizza/passata sauce

  • 1 cup reduced fat grated cheese

  • 1-2 tbsp extra virgin olive oil



    Instructions

    1. Preheat oven to 205 degrees

    2. Slice the eggplant into rounds, place on baking tray and drizzle with extra virgin olive oil

    2. Bake the eggplant rounds -aprroximately 15 minutes on each side

    3. Remove from oven and add the pizza sauce and cheese to the eggplant.

    4. Bake until the cheese melts.
