Green bean, asparagus and broccolini salad
A nutritious salad that can be served cold or warm
Ingredients
1/2 cup almonds, roughly chopped
450g green beans, trimmed and cut in half
220g broccolini, cut into thirds
bunch of asparagus spears, trimmed and cut into thirds
½ teaspoon fine sea salt, divided
2 tablespoon extra-virgin olive oil
1 tablespoon lemon juice
2 teaspoon Dijon mustard
1 tsp crushed garlic
½ teaspoon freshly ground black pepper
Pinch of chilli flakes
1/2 cup crumbed feta cheese
Instructions
1. Heat a large frying pan, over medium heat. Add the chopped almonds and cook, stirring frequently (for approximately 3 minutes) until turning golden on the edges. Set aside and allow to cool
2. Blanch the greens in boiling water until tender. Drain and immerse in a bowl with ice and water
3. Then whisk together the olive oil, lemon juice, mustard, garlic, black pepper, chilli flakes and remaining ¼ teaspoon salt. Set aside.
4. Add almonds and feta to the greens and pour over salad dressing. Toss to combine
5. Transfer the salad to a serving bowl
