Chocolate muffins

These delicious chocolate muffins offer a healthy alternative to traditional muffins

Ingredients

  • 1 small head of steamed broccoli

  • 1/2 cup of grated carrot or sweet potato steamed

  • 1 egg

  • 2 ripe bananas

  • 1/3 cup sugar of choice

  • 1/3 cup extra virgin olive oil

  • 1 cup self raising flour

  • 1/2 tsp baking powder

  • 1 tsp baking soda

  • 2 tbsp cocoa powder

  • 1 tsp vanilla essence

  • Pinch salt

  • 1/2 cup choc chips

Instructions

  1. Preheat oven to 180

  2. Place broccoli, carrot, egg, banana, sugar and oil in processor and mix

  3. Add flour, baking powder, baking soda, cocoa powder, salt and vanilla essence and process until smooth

  4. Fold in choc chips

  5. Add 1 heaped tsp batter into mini muffin tray

  6. Cook for 35 mins
