Chocolate cookies

These delicious chocolate cookies offer a healthy alternative to traditional cookies

Ingredients

  • 1 cup (110 grams) walnuts/almonds

  • ⅓ cup brown sugar

  • ¼ cup whole rolled oats

  • ¼ cup raw cocoa powder

  • ½ teaspoon bicarb soda

  • 1 egg

  • 2 medjool dates, pitted

  • 1 teaspoon vanilla essence

  • mini m&m’s or sprinkles or choc chips, optional

Instructions

  1. Preheat the oven to 170 degrees and line a large baking tray with gladbake

  2. Place nuts, sugar, oats, cocoa and bicarb soda in the bowl of a food processor

  3. Blitz until finely chopped

  4. Add egg, dates and vanilla and blitz until well combined and a thick, sticky 'paste' has formed

  5. Scoop out teaspoonfuls of mixture and place on prepared trays

  6. Using the back of a clean, wet teaspoon, flatten biscuits as best as possible (they won't spread while cooking)

  7. Top with sprinkles or mini m&ms or choc chips (optional)

  8. Bake for 8-10 minutes
