Mediterranean white bean soup

This hearty soup is the perfect meal or snack during the cooler months.

Ingredients

  • 1/4 cup diced onion

  • 1 small head of broccoli, cut up

  • 1 small head of cauliflower, cut up

  • 3 carrots, diced

  • 200g baby spinach leaves

  • 400g can of cannellini beans

  • 1/2 jar of your favourite passata sauce

  • massel stock cube

  • 2 tbsp extra virgin olive oil

  • pinch salt

Instructions

  1. Heat oil in pot

  2. Add onions and a pinch of salt and saute until brown

  3. Place broccoli, cauliflower, carrot, spinach in pot

  4. Add jar of cannellini beans

  5. Add 1/2 jar of passata sauce

  6. Cover with water

  7. Add stock cube

  8. Bring to boil, then simmer on low heat until vegetables are soft
