Mediterranean white bean soup
This hearty soup is the perfect meal or snack during the cooler months.
Ingredients
1/4 cup diced onion
1 small head of broccoli, cut up
1 small head of cauliflower, cut up
3 carrots, diced
200g baby spinach leaves
400g can of cannellini beans
1/2 jar of your favourite passata sauce
massel stock cube
2 tbsp extra virgin olive oil
pinch salt
Instructions
Heat oil in pot
Add onions and a pinch of salt and saute until brown
Place broccoli, cauliflower, carrot, spinach in pot
Add jar of cannellini beans
Add 1/2 jar of passata sauce
Cover with water
Add stock cube
Bring to boil, then simmer on low heat until vegetables are soft
