Lentil bolognese
A nutrutious alternative to the tradtioanl bolognese
Ingredients
1/2 cup onion, diced
1 can of brown lentils
2/3 jar of passata sauce (I use Chef Luca Ciano)
2 zucchinis, diced
2 carrots, grated
1 head of broccoli, cut into small florets
2 small cans of corn kernels
150g mushrooms, diced
handful of green beans
1 tbsp extra virgin olive oil
Instructions
In a large pan, drizzle oil and sautee onion until brown
Add zucchinis, carrots, broccoli, corn, mushroom and green beans and cook over medium heat for 5-10 minutes
Add lentils and passata sauce and stir occasionally until all vegetables appear well cooked
Serve with pasta or in a baked potato/sweet potato
Top with grated parmesan cheese and enjoy!
