Lentil bolognese

A nutrutious alternative to the tradtioanl bolognese

Ingredients

  • 1/2 cup onion, diced

  • 1 can of brown lentils

  • 2/3 jar of passata sauce (I use Chef Luca Ciano)

  • 2 zucchinis, diced

  • 2 carrots, grated

  • 1 head of broccoli, cut into small florets

  • 2 small cans of corn kernels

  • 150g mushrooms, diced

  • handful of green beans

  • 1 tbsp extra virgin olive oil

Instructions

  1. In a large pan, drizzle oil and sautee onion until brown

  2. Add zucchinis, carrots, broccoli, corn, mushroom and green beans and cook over medium heat for 5-10 minutes

  3. Add lentils and passata sauce and stir occasionally until all vegetables appear well cooked

  4. Serve with pasta or in a baked potato/sweet potato

  5. Top with grated parmesan cheese and enjoy!
