Tuna & potato patties

A tasty meal to be enjoyed with a side salad. Makes approximately 6 patties, 3 serves

Ingredients

Patty Mixture
3 medium white potatoes, peeled and diced
300g canned tuna (3 x 95g tins) drained
10g fresh dill, finely chopped
2-3 tbsp capers, finely chopped
1 tsp salt and pepper

Crumb Coating
2 eggs, beaten
250g breadcrumbs
100g flour
3-4 tbsp olive oil, for pan frying

Instructions

1. Boil potatoes in water until soft. Drain and then mash the potatoes. Put mashed potatoes into a  bowl and cool.

2. Add the tuna, fresh dill, capers, and salt and pepper to the cooled  mashed potatoes and mix well to combine.

3. Form into 6 patties.

4. Place flour, eggs, and breadcrumbs into 3 separate shallow dishes.

5. Dip each patty firstly into the flour (shake off excess), dip in the egg, and then coat in breadcrumbs, pressing to adhere.

4. Heat the oil and pan fry the patties over a medium heat for approximately 1-2 minutes on each side or until golden brown.
