Green vegetable soup

A quick and simple soup rich in antioxidants

Ingredients

  • 1/2 cup diced onions

  • 3 zucchinis, diced

  • 1 head of broccoli, cut up

  • 120g spinach leaves

  • 2 potatoes, cut into small pieces

  • 1 massel stock cube

  • Parmesan, grated

  • extra virgin olive oil

Instructions

  1. Saute onion in pot until brown

  2. Add zucchini, broccoli, spinach and potato

  3. Cover with water

  4. Add stock cube

  5. Bring to boil and then simmer for approximately 40 minutes

  6. Blitz until soup is smooth

  7. Season with salt, pepper and add grated parmesan and enjoy!
