Lentil barley soup

A hearty soup perfect for the cooler months

Ingredients

  • 1 cup of Mckenzie’s soup mix

  • 1/2 cup diced onions

  • 3 zucchinis, diced

  • 3 carrots, diced

  • 5 kale stalks, cut up (discard stalks)

  • 2 potatoes, diced

  • 1 tsp cumin

  • 1 tsp sugar

  • 1/2 jar of passata sauce

  • 1 massel stock cube

  • 2 tbsp extra virgin olive oil

  • Parmesan, grated

Instructions

  1. Soak soup mix for a couple of hours and rinse

  2. In a pot, saute onion in pot in a small amount of oil until brown

  3. Add carrots, zucchini, kale, potato

  4. Cover with water

  5. Add soup mix

  6. Add 1/2 jar passata sauce

  7. Add stock cube, cumin and sugar

  8. Bring to boil and then simmer for approximately 40 minutes

  9. Add grated parmesan and enjoy!
