Lentil barley soup
A hearty soup perfect for the cooler months
Ingredients
1 cup of Mckenzie’s soup mix
1/2 cup diced onions
3 zucchinis, diced
3 carrots, diced
5 kale stalks, cut up (discard stalks)
2 potatoes, diced
1 tsp cumin
1 tsp sugar
1/2 jar of passata sauce
1 massel stock cube
2 tbsp extra virgin olive oil
Parmesan, grated
Instructions
Soak soup mix for a couple of hours and rinse
In a pot, saute onion in pot in a small amount of oil until brown
Add carrots, zucchini, kale, potato
Cover with water
Add soup mix
Add 1/2 jar passata sauce
Add stock cube, cumin and sugar
Bring to boil and then simmer for approximately 40 minutes
Add grated parmesan and enjoy!
