Pumpkin, candied walnuts, mint & goats cheese

A delicious side with so much flavour

Ingredients

  • 1/4 jap pumpkin, thinly sliced

  • 1 bunch of mint leaves

  • 80g goats cheese, cut into small cubes

  • 3/4 cup walnuts

  • 2 tbsp honey

  • extra virgin olive oil (for roasting and salad dressing)

  • 1 tbsp sumac

  • juice of 1 lemon

  • salt and pepper

Instructions

  1. Preheat oven to 180 degrees celcuis. Thinly slice pumpkin and arrange on a baking paper lined tray. Drizzle with olive oil and bake until tender (approx. 30 minutes)

  2. While pumpkin is baking, heat walnuts in a saucepan and add honey and salt. Stir while honey bubbles for 2 minutes

  3. Remove from heat and place on a clean sheet of baking paper and allow to cool

  4. Combine 3 tbsp olive oil, lemon juice, sumac, salt and pepper in a small cup for the dressing

  5. Arrange roasted pumpkin on serving plate. Top with mint leaves, goats cheese and candied walnuts. Pour over dressing and enjoy!
