Tofu laksa

A delicious meal with so much flavour

Ingredients

  • 1/4 cup onion, diced

  • 1 can of pandaroo light coconut milk

  • 1/3 cup laksa paste

  • 1 cup water

  • 1 capsicum, cut into strips

  • 2 carrots, sliced

  • 2 zucchinis, sliced

  • handful of bean sprouts

  • 225g firm tofu, diced

  • handful of coriander

  • 1 lime, cut into wedges

    Instructions

  1. In a large pot, drizzle extra virgin olive oil. Add onions and saute until brown

  2. Add laksa paste and cook for 30 seconds or until aromatic

  3. Add coconut milk and water and simmer for 3 minutes

  4. Then add capsicum, carrots, zucchinis and simmer on low heat until the vegetables are tender

  5. Add tofu and stir

  6. Ladle laksa mixtured into a serving bowl and top with coriander, bean sprouts and serve with a lime wedge
