Tuna patties

A quick and easy protein dish for kids and adults to enjoy

Ingredients

  • 425g tin tuna, drained

  • 2 eggs

  • 1/2 - 3/4 cup breadcrumbs

  • 1/2 tsp oregano

  • 1/2 tsp thyme

  • 1 tsp french mustard

  • 1 carrot, grated

  • 1 zucchini, grated

  • Extra virgin olive oil, for frying

    Instructions

  1. Mash the drained tuna in a medium sized bowl

  2. Add 2 eggs, salt, pepper, herbs, french mustard, grated carrot and zucchini and mix until combined

  3. Add breadcrumbs to bind

  4. Form into small flattened patties

  5. Shallow fry on medium heat until golden brown on each side

  6. Drain on paper towel to absorb excess oil
