Thai pumpkin soup

The humble pumkpin soup with a few extra vegetables

Ingredients

  • 1/4 kent pumpkin, roughly cut up

  • 1/2 cauliflower, roughly cut up

  • 3 carrots, roughly sliced

  • 1 potato, roughly cut up

  • 1/4 cup diced onion

  • 1 massel stock cube

  • 400ml Pandaroo lite coconut milk

  • 1 tbsp extra virgin olive oil

Instructions

  1. Heat oil in pot

  2. Add onions and a pinch of salt and saute until brown

  3. Place pumpkin, cauliflower, carrot and potato in pot

  4. Add pandaroo lite coocnut milk

  5. Cover with water

  6. Add stock cube

  7. Bring to boil, then simmer on low heat until vegetables are soft

  8. Once all vegetable are soft, blitz until smooth consistency is reached
