Vegetable soup

A light soup when you’re feeling unwell

Ingredients

  • 1 cup diced leek

  • 1 zucchini, diced

  • 2 carrots, diced

  • 3 celery stalks, thinly sliced

  • 2 massel stock cube

  • extra virgin olive oil

Instructions

  1. Saute leek in pot until brown

  2. Add zucchini, carrot, and celery

  3. Cover the vegetables with water

  4. Add stock cubes

  5. Bring to boil and then simmer for approximately 40 minutes or until vegetables are soft
